Grapes harvested from 150-200 year old ungrafted vines are vinified and aged for 30 months in stainless steel tanks on fine lees with occasional batonnage, with 25% of the wine spending the first 12 months of its aging in French oak barriques.
This is our first Greek wine and it's fitting that it comes from our favorite Greek Island. Assyrtiko is one of those just refreshing wines you want to enjoy while on a beach somewhere. This one is more than that. There's really a depth of flavors here that conveys the care the winemaker put into this wine. From precision berry selection to aging on the less for twice as long as what you might come to expect from a French Chardonnay, this wine really delivers a wine drinking experience you won't soon forget.

The name Evdemon is derived from "good spirit" or "good demon." With fruit from the winery's highest-elevation fruit, at 250 meters above sea level, the Estate Argyros 2020 Santorini Assyrtiko Cuvee Evdemon comes from a windswept site with 160-, 180- and even 200-year-old vines. The drawing on the front label shows mules used in farming. If Monsignori delivers a more delicate side of Assyrtiko, Evdemon is a beast in comparison. The wine ages on the lees for 30 months with bâtonnage, and 25% of the wine sees oak (including some Stockinger barrels). "This wine reassures us in our decision to make single-vineyard wines," says Director Dimitris Motsos. They use an optical sorter to make sure the fruit is pristine, and they make every effort to remove any varieties that are not Assyrtiko. The wine offers a firm mouthfeel and bigger structure for sure, with pronounced salinity that is especially present in the wine's taste profile (more so than the bouquet). The wine's pH is very low at 2.9. Those mineral tones are followed by subtle softness with lemon cream and acacia honey. This is a bottle to put aside for a few more years.
